South Indian cuisine is a vibrant tapestry of flavors, textures, and ancient culinary traditions. Unlike North Indian food, which often features wheat-based breads and heavy creams, South Indian cooking is defined by its use of rice, lentils, coconut, and tamarind. It is celebrated for being light yet deeply flavorful, often incorporating a technique called tadka (tempering) where spices like mustard seeds and curry leaves are toasted in hot oil to release their aroma.
These are world-renowned and usually served with Sambar (a vegetable lentil stew) and various Chutneys (coconut, tomato, or mint).
